Broccoli Toast—My Attempt...

Goddaughter Elvira did serve such delicious Broccoli Toast while I was in Limburg.
Sure, she is a Lady Chef and an excellent one!
This is what Evira served my best friend Ellie (her Mom) and me...
So, once back home in the USA, I did ask Elvira for the recipe.

BROCCOLI TOAST

Ingredients:

  • 8.5 oz broccoli rice
  • 1.5 tablespoon of coconut oil
  • 3 eggs
  • 1 tablespoon of coconut flour
  • 4 oz smoked salmon
  • 2 avocados
  • flax seeds to garnish
Instruction
  1. Heat a frying pan with the coconut oil and sauté broccoli rice for a few minutes. It may just be al dente. Let cool a little.
  2. Add the eggs and the coconut flour. Mix well and let stand for a while.
  3. Heat a frying pan and spoon 1 tablespoon of the mixture into the pan if it is hot enough and bake brown. Bake all broccoli toast like this.
  4. Serve with the smoked salmon, flax seeds, tomato, basil and or avocado.
Sauté broccoli rice
Adding the coconut flour.
Adding the eggs...
Trying to form the toast patties...
Baking them brown...
And there is my very humble version of Lady Chef Elvira's professional Broccoli Toast.
Tried this on July 5th and have been searching for some ready broccoli rice to repeat and perfect it...
NOPE.
So this is it—a humble form of Elvira's perfect Broccoli Toast.
Served on a heated Pillivuyt plate on a Le Jacquard Français linen rose placemat.

I’ve never had broccolini toast. That caprese salad sure looks tasty.

    1. Dearest Debby,
      Guess you're right.
Elvira's Caprese salad served with it was a great choice.
She did not serve the recipe's avocado...

  2. That's an interesting recipe. Haven't come across anything like it and have heard of cauliflower rice but not broccoli. Thanks for stopping by my corner of the world. December blessings.

Yes, cauliflower rice you can find easily but I've never come across broccoli rice.
Would love to make it more frequent if that could be found 😏
You're quite welcome—always a joy to visit you.

  6. Dearest Mariette,
Broccoli toast is a brilliant idea.(and I don't think the fact that broccoli is my favorite vegetable has anything to do with that!🤭) I make my own 'rices' with the fine grater blade on my KitchenAid food processor. Will try broccoli next!
Have a sunny, happy week end...............suzi

    1. Dearest Suzi,
Broccoli persé for its color works so well but making your own rice is more tedious—have to try doing so after the New Year.

  12. Hi, Mariette!
I love broccoli and salmon, but Nuno can't stand either of them! :P
That broccoli toast and salmon look delicious and I was happy to see that your Goddaughter Elvira has two boys, beautidul just like their mom and dad.
I remember reading about her marriage.
And I especially like that the youngest told Pieter that he had to carefully read all the notes!
Lots of hugs from us to you, Pieter and the kitties!
    :)

That is not a good match if only one loves certain dishes...😏
Yes, Elvira has a lovely family and the boys are very clever.
It was hilarious when Pieter got told to carefully read all the notes!
Big hugs back to you from both of us.
Kitties love to lounge more when the weather is cooler...

  13. Well, sometimes I just have a little more trouble and cook something different for the two of us or eat certain dishes when Nuno is not home and I eat alone! Like seafood, to wich he is allergic.
Tareco is also feeling more cold. His fur is thicker and he cuddles more with us on the sofa, these days.
He's sleeping in my lap right now!
Lots and lots of hugs to you, Pieter, the louging kitties and Kwekkie!
    :)

Yes, sometimes we can just do that and please ourselves with some favorites.
It is all about labor of love!

    2. Our Tareco is the same! XD
I usually say to Nuno that he is like ASAE, the Portuguese Economic Food Security Authority. He has to check everything we eat and seems to think our food is his, too!
      Lots and lots of hugs!
      :)
