{Healthy & Quick Vegetarian Supper}

We all have days that we actually don't have much time for cooking and still want to enjoy a healthy supper.

  • It is the time of new red Russet potatoes so I did boil them in the skin and let them cool. 
  • Meanwhile I did slice up an entire English cucumber (bought with 3 in a pack at Costco Wholesale) and made a dressing using part reduced fat mayonnaise from Trader Joe's (picture is below) with some brown natural Dutch vinegar (use any type you will have) and Italian seasoning
  • If you do have some grape or cherry tomatoes on hand; slice some in half and add them too.
Toss the salad and let the ingredients blend in.
Cubing the cold boiled potatoes and with olive oil, to which I added some real unsalted butter, I did fry them.
Adding some shredded rice cheese at the last minute.

  • This is what your fried potatoes look like with the shredded rice cheese kind of melted over them.

  • This is how the English cucumber salad with some cherry tomatoes looks like... A very healthy and quick but tasty vegetarian supper!

  • These are the Whole Foods Market Rice shreds with Mozarella flavor as a shredded cheese alternative.

  • Contains 0% Cholesterol and is thus a healthy cheese. 
  • The Sodium is 15% but when you don't add salt to the potatoes when boiling, you balance that out.
  • Eat green - for body & earth...


  • Again this comes with 0% Cholesterol and Sodium only 3%.
This way we will stay healthy and still enjoy a hearty meal with such an eating routine.

  4. Hello Mariette, By coincidence, I was just thinking how to use up some potatoes in the refrigerator. I don't think that rice cheese is available here, but I'll use your recipe as an inspiration. With some spices or curry added, this looks like it would make a good Indian-type dish.

      The taste is just as it says; cheese with Mozzarella flavor; only a healthy alternative. Staying healthy and in shape you only reach if you know what to eat and more importantly; what NOT.

      Well, if one is in a hurry with not much time on hand; that makes us more inventive! Always keeping in mind our health issues and trying to eat healthy. Far better than grabbing some fast food with high sodium and probably high fat.

  18. They look pretty simple to cook and also very tasty! I love vegetarian meal from time to time. I've tried vegetarian cheese before, I think it was made of soy milk. Never had rice cheese before, but I'm sure it's very yummy!
    When I lived in Japan, I never had potatoes with skin. We always peeled. I don't know why. But I started to eat potatoes with skin here in the U.S. and I love it :-)

      The vegetarian cheese is by far not the same as this one. Rice cheese is very soft; not as plastic like looking and great cheese flavor too.
      Oh, eating potatoes with skin we also learned here! It also is simple and since potatoes are very expensive here in the U.S. it saves you quite some waste by not peeling them. Funny the way we all adapt to other cultures...

      This rice cheese is great; also in salads! The only drawback is that so far only Whole Foods Market sells it... But you can stock up on it easily.

    I went to the whole foods market rice with Mozzarella cheese is thus a healthy cheese.
    The healthy cheese for balance that out are O% cholesterol Free Dairy Free 3%.

      Ja, dat weet ik ook heel goed. Het schept veel vreugde om glunderende gezichten aan tafel te zien. Heb het altijd erg graag gedaan om voor anderen te koken! Ook voor manlief natuurlijk.
