Tea with Turmeric Coconut Flour Muffin

Yes, baking Muffins from Coconut Flour makes for a delicious result!
Found the recipe on line one day: Turmeric Coconut Flour Muffin Recipe and had to try it.
Here shown on the tennis tray with teacup, see below post.
I will give you the recipe below...
Ingredients
6 large eggs
½ cup unsweetened coconut milk
⅓ cup maple syrup
1 t vanilla extract
1 cup coconut flour
½ t baking soda
2 t turmeric
½ t ginger powder
pinch of salt and pepper

Instructions
Preheat oven to 350ºF. Prepare a muffin tin with 8 muffin liners.
In a large mixing bowl, add eggs, milk, maple syrup, and vanilla extract. Mix until it's well combined and the eggs begin to bubble.
In a small bowl, sift together coconut flour, baking soda, turmeric, ginger powder, pepper, and salt.
Slowly stir the dry ingredients into the wet ones, until the batter is smooth and thick.
Transfer the batter to a prepared muffin tin, dividing the batter evenly.
Bake for 25 minutes, until slightly browned around the edges.
Remove muffins from the oven, and transfer to a wire rack to cool.

Working with coconut meal is something else!
It can absorb so much liquid - surprisingly!

But in the end, the result is good and turmeric is so healthy as an anti inflammatory ingredient.

      When we did have our B & B guest (only to help out a real commercial B & B that got over-booked...) I did serve these for breakfast. But we also had them with tea alone and they're perfect for that.

      Yes, this is surprisingly good and mainly because of the mild affect of the coconut milk. Also blending it with ginger powder and than adding maple syrup. Who would NOT like it?!

  5. Good Afternoon Mariette, Well, this is such a surprise, because I have just bought a coconut flour cookery book and then I pop over to visit you and you have treated us to a very unusual recipe containing coconut flour.
    I know turmeric is very good for us and I use it a lot in my savoury cooking, but I have never used turmeric in a muffin. I have learnt something new today.
    I look forward to trying your recipe.
    .... and your teacup and saucer is very beautiful. It would be such a pleasure to drink from this cup.

  7. Your muffin looks so yummy, Mariette! I've never thought of combination of turmeric and coconut flour but it sounds very interesting. I take turmeric supplement because of anti-inflammatory effect :-) The tray and tea cup are very pretty! Enjoy your yummy treat, Mariette :-)

  9. Dear Mariette - I don't recall having seen coconut flour - may be it is available in the Asian or health food shops. I will have a look, as I like the sound of your turmeric muffins.

      Thank you and yes, all nuts are favorite recipe ingredients for me as well!
      Personally we did escape the damage from Irma.
      Others around us are not that lucky... so many trees down and damage to homes and cars.
      Lots of power outage too. Statewide we had 360,000 homes and business affected; that is a LOT.

      Well, the combination of turmeric with ginger makes it into a very lovely taste.
      Also the addition of coconut milk has a softening influence and don't underestimate the sweetness of maple syrup!

  29. Your muffins look fantastic!! Thanks for the recipe, dear Mariette, although I don't know if I will manage to find the coconut flour! Also, I was just wondering, are not the 6 eggs too much for only 8 muffins? Glad to read you suffered no damages from Irma in our area!

      Haha, you should have seen my face when I used this recipe for the very first time.
      I thought, creating disaster as it is way too much liquid... But you will find out when you start adding the coconut flour, how fast it absorbs ALL the liquid and you end up with very thick dough!
      But the end result is worth it!
