Mom Made the BEST Onion Sauce - CRAVED for it...

Already on April 23, I made us a replica of Mom's BEST Onion Sauce because I CRAVED for it...
Onion Sauce with Langostino Lobster Tails... tiny red potatoes boiled in skin and green asparagus
Found them at Costco, Langostino Lobster Tails from Chile
On the Internet I found this photo (obviously from 2011...
My next fresh bought, product of Chile Langostino Lobster Tails...


Mine were fresh!

 Onion Sauce
Ingredients:

350 gram onions finely chopped 
40 gram butter or oil 
25 gram flour (I used whole wheat)
 2.5 dl milk 
2.5 dl bouillon 
1 bay leaf
few sprigs of parsley
1.5 dl whipped cream
 salt and pepper
 fresh nutmeg

Preparation method:

Melt the butter in a nonstick skillet. Add the onions and fry them until soft and golden. Not brown. Stir in the flour and fry it gently for about 3 minutes. Then stir in the stock and  milk, stir well so that no lumps form. Bring to a boil, add bay leaf and parsley and then cook for 20 minutes, stirring frequently on low heat. Otherwise, the sauce will burn. So be careful: take out the parsley and bay leaf. Stir in the whipped cream and season with salt and pepper. Then if desired, some nutmeg.

It sure did bring fond memories back of Mom!

      No, Costco wholesale does that!
      We both love onion sauce and this brought back fond memories of Mom's excellent onion sauce.

  2. Hello Mariette, This sure sounds good. Unfortunately, milk and cream are absolutely forbidden to me, but perhaps I can figure out a substitution using rice milk. I have read some recipes that require a blender, and I am currently shopping for one. You can buy rice milk here, but it is loaded with sugar.

      It is hard to find milk without sugar. Only Trader Joe's has for me the almost sugar free soy milk. All others are like you mention, loaded with sugar.
      Hope you find a way to find substitutes, this is delicious.

  4. Dear Mariette - the combination sounds really delicious - I too like potatoes cooked in their skins, and they are far more nutritious done that way too.

      Yes, this kind of onion sauce (though Mom never added the whipped cream) is always good. Sure glad I found this recipe that comes very close to hers.

  9. that sounds not just delicious but very special dear Mariette! Oh you bet, I miss a lot of my Mom;s cooking so much. The way she makes spaghetti sauce which would seem weird for non-Filipinos with so much sweetness, I love it so much! And she also cooks great Chicken Pastel, a spanish style chicken dish made with cream and mushrooms and water chestnuts!

      You sure are filled with very fond memories of your Mom's cooking!
      That's what kept us alive and build us and now only the memories are there and the real dishes can never be 'copied' to come close to theirs... we try hard but somehow it never is exactly like that. Also the nostalgia about it adds to the flavor.

  11. hach so lecker und mir läuft gerade das Wasser im Mund zusammen, was für ein tolles Rezept hast Du von Deiner Mutter bekommen, liebe Mariette.
    Ja, es gibt auch Rezepte, die ich von meiner Mutter geerbt habe und sehr in Ehren halte, z.B. Ostfriesischen Grünkohl mit Pinkelwurst.

    My Mom is a much better cook than I am, and we visit Portugal she loves to host the whole family at her house.

      My Mom used to host big part of her family for dinner once a year when we had the Fair. Fond memories of those times.
      Well, guess it rubbed off on me as I've hosted the entire family when we still lived in The Netherlands. Cooking dinner for 17...
