Yes, each trip we make to Atlanta for stocking up on healthy food items, I do come home with Trader Joe's PERFECT Belgian Endive.
They sell them packages with 3—one Red and two White.
Perfect for a healthy salad for two!
Don't forget to take the BITTER core out with a pointed knife!
Next I slice them in half...

Usually I prepare the dressing from some Trader Joe's mayonaise, some Chia seeds and also add some white Modena vinegar from Trader Joe's.
Very simple and healthy!

Unfortunately I shouldn’t eat seeds - I have Diverticulitis. I admit, I do on occasion eat what I shouldn’t and I always end up in inflammation and pain. Once I had to go ER - that was before I was diagnosed. I had eaten delicious popcorn!

I shop at Trader Joe's often but have never picked up a bag of endive! I am not certain I've ever eaten it. However, after seeing how you prepare it and realizing how healthy it is for us ... I am going to purchase a bag next time I'm there!

DeleteIt is funny indeed how most people (we think) don't have a clue about how to prepare this veggie. You likewise can prepare the Radicchio like that.
Belgian endive is a good start—because of its mildly bitter taste and Radicchio is the next step for a more intensified but pleasant bitter.

DeleteJust don't ever flush a lot of chia seeds down the sink/garbage disposal! I did that this year when I found a web in my container (some insect I guess!) and chucked the whole lot away. . . . . . and totally plugged up the kitchen plumbing. They swelled into a gelatinous mass - it was awful! I do need to buy more - this time in a much smaller bag so I will use them up quickly! I like to add them to my oatmeal or granola.
