{Tuscan Red Quinoa Salad - Whole Foods Sarasota FL}

When we were in Sarasota, FL during our stay at the Hyatt Regency Sarasota we went shopping at Whole Foods Market for our next stay at the Hyatt House Miami Airport. That's when I did spot this healthy looking Tuscan Red Quinoa Salad. Sure enough, before we did go on vacation to Arizona, I did prepare this and want to share it with you here.
This is how it looked at Whole Foods in Sarasota, FL...
Thanks to my iPhone, I captured the 'ingredients'...
Also ribbon kale, a healthy Superfood.
Red Quinoa I found at Trader Joe's 
Let me list here the ingredients that I used:

Red Quinoa used the 16 oz
1 Onion diced
Garlic to taste
2 Zucchini diced
2 Yellow Squash diced
1 Red bell pepper diced
Ribbon Kale
Sun dried tomatoes
Pine nuts
1 Can Garbanzo beans
1 Can pitted green olives (I used black olives)
Lemon juice
Cook the Red Quinoa according to package.
Stir fry the onions and the garlic in some olive oil, than add the other veggies, pine nuts and sun dried tomatoes
Adding the halved olives and the ribbon kale and finally the cooked Red Quinoa and the lemon juice...
Your Tuscan Red Quinoa Salad is ready to eat!

      That is funny... ALL Beans are so healthy for us and also Kale is a healthy green leaf vegetable, which counterbalances inflammation.
      As a matter of fact, we ate this (as a left over) tonight...

      In general Whole Foods is rather high in price but they do have great quality food and produce and we can learn a lot from them. This was easy to capture with my iPhone and it worked. We both are very health conscious and it pays off for feeling fit and looking healthy as well.

      This is really delicious and very easy. The red one I used since Whole Foods had it as ingredient but either color would be fine. That's why I used the entire pound and it also freezes well. Great for having something healthy to eat when coming back from vacation.

    2. Hello Mariette, Your quinoa salad looks delicious and healthy. My mother has started using quinoa, and made it several times when I was home; she used the tri-color kind for fun and good looks. I wanted to bring a package back with me, but with the airline luggage restrictions that I faced, there was no room for it.

      Oh, we know too well that kind of pain when having to pack up and since all the luggage restrictions, have to leave things out - with bleeding heart! Too bad... It used to be 2 pieces of luggage with 70 lbs each. That way you could bring back so many items that would last you a long time. My first experience was with the tri-color kind and it made a mess in my rice cooker, as it kind of exploded and hung attached to the lid. The white variety did behave a lot better, more like rice. But it is such a convenient and very healthy seed.

      Thank you and it was a delicoud dish indeed. No Quinoa does not look like lentils, it is a tiny seed and comes in red, multi colored, black and white and for sure you will have it available in Greece as well.

      Hier is het niet zo zeer een kwestie van 'hippe' jongeren voedsel maar eerder voor diegenen; jong èn oud, die gezondheidsbewust willen leven. Toch een keer proberen en zet dat 'hip' gevoel maar even opzij...

      Oui, il ressemble un peu de boulgour et est un grain très sain ou une souche de semence, comme on l'appelle aussi. Il est disponible en plusieurs couleurs, rouge, noir et blanc, bien sûr, mais c'est la même chose sur le plan nutritionnel. La recette est très savoureuse.

  10. Good Afternoon Mariette, I love quinoa, but I have never heard of red quinoa, I shall certainly be looking for it next time I visit the shops.
    I love the addition of kale and the halved black olives.... this is a salad which I will be making in the near future.

    I wanted to thank you for your kind comment on my blog. It was just what I needed, yesterday being a difficult day for all of us.

    Your red quinoa salad looks delicious Mariette! Quinoa is a firm favourite with me and my daughters too. I haven't seen red quinoa here yet, When we eat quinoa we often add grilled vegetables, fresh oregano and and feta cheese. Which is really tasty too!

      You're quite welcome dear friend. One can read between the lines and knowing you rather well, that's what came to mind... Glad I could reach your heart.
      Color does something for the presentation as we all eat with our eyes. We use pretty china and sometimes we select the food according to a color palette and if that also happens to be a healthy ingredient, we get double rewards!
      Enjoy the beginning of the fall, you already got melancholic due to the ending of summer and you almost donated all your strength to the hedge clipping; donating your time and love.

  12. Mariette, first, I just love your charming yellow house! It looks like it came out of a favorite story tale. This dish looks yummy, and has everything I am allowed to eat these days, having to abstain from wheat, soy, dairy, including eggs, white potato, corn and white or brown rice! But the yeast gives me pause, as I am treating yeast overgrowth in my body! Can I just eliminate it?

    1. Dearest Barbara,
      Thank you about the compliments about the house; we still are very content with our choices from last year. As for color, that comes totally as my responsibility as my husband is color blind. But he enjoys it too!
      So glad you like this healthy dish and I was just thinking by eating healthy leafy vegetables, that counterbalance inflammation, why not give Kale a try? It almost looks like with all you cannot eat, that will throw you off balance and you will be struggling to regain strength and a strong immune system. Sad and I feel so sorry for you!
      Try eating lots of antioxidants, like blue berries. If you search at the top of my blog in the box, you will find all posts with antioxidants. Or even Antioxidant Super Foods and Antioxidant Super Fruits you can try to see what comes up from previous posts. Also make sure you drink lots of water before each meal a big glass too. I'm surprised that you don't list sugar here as a thing to avoid... Any soft drinks or fruit juices I would leave out of my system for a while, as well as refined sugar. Wishing you well soon as it never is fun to be off balance.

    Compartment I guess my brain active are great helf theses day a beautiful good foods.

      Yes, Quinoa is a very healthy seed and the entire salad, full of vegetables is very healthy.
      Guess during the summer, typhoons are always lurking around in Japan. Hope it will not be too bad.
      The Spider Lily or Lycoris radiata is your Higan-bana and it is a special cultural flower for Japan and also very beautiful. A member of the amaryllis family.

  17. Es sieht gut aus, liebe Mariette. Quinoa habe ich auch schon probiert. Gekocht mögen wir es nicht so, aber gebacken. Aber Gemüse geht immer. Linsen mag ich sehr gern. Bohnen auch, doch nicht jeder in der family verträgt Bohnen ... da muß man dann den goldenen Mittelweg wählen.
    Danke auch noch für Deinen Kommentar, den ich in meinem Blog noch beantwortet habe.

      Ja es ist lecker auf verschiedenen Methoden der Zubereitung. Wir beide, da wir ja beide Gärtner-Kinder sind, lieben Gemüsse und auch Obst sehr. Linsen koche ich auch gerne als eine Mahlzeit Zuppe und natürlich Bohnen da die so gesund sind. Rechnen muss man schon damit wo man hin geht und wer mitessen kann...

Don't know if that will be available in India, guess so as my Indian friends use it because they know about its fabulous health benefits.       It sure is yummy and so easy to prepare!
      Quinoa is one of the few non-animal proteins that's considered a 'complete protein' in that it has all of the essential amino acids our body needs to build protein molecules.
