High Tea Prepared and Baked by Me and History taught by Pieter J.C.Vedder

Like to show you yet another Hight Tea Table, our donation to the local Rotary Club's bi-annual auction. 


Yep, the day before I'd been rather busy in the kitchen as I did all the baking, except for the 3 varieties of cookies and 4 kinds of European Chocolates.
As I was about to mention all I'd created, for capturing on video and for my Parents back in The Netherlands, I got interrupted... 
By someone, not dressed appropriately for a High Tea! Ignoring any etiquette...


Did not have the time on June 28, 1998 for making photos, so these is a still shots from the video.
In the center you see my Stracciatella Cream Torte; Bottom center is my Peach Cheesecake (actually a real Quark Torte) on a Baked Bottom; Bottom Left is my Mocha Ice Cream Torte garnished with Pirouettes Wafers and Chocolate Coffee Beans.
On the Left with Red Ribboned Bow is my Tiramisu-Charlotte Torte. 


Top left are cookies... a total of three European varieties I had.
Tablecloth used is our Portuguese Guimarães white work, we bought in Coimbra in 1994 while on tour through Spain Portugal for 19 days.


Top Center in white square is my Italian Tiramisu, made with Mascarpone and dusted with Dutch Chocolate
Top Right is my home baked Open Fruit Pie.
Bottom Right is my Dr. Oetker Chocolate Cream Torte garnished with Swiss Chocolate and Maraschino Cherries.
A total of 7 different Tortes and Pies...

There were Dark Chocolate Non-Pareils and three more European Chocolates.

While I captured this little memory of all the work, husband Pieter was giving a general lesson on the etiquette and history of a High Tea in the living room.
He always will remain a teacher!

      We at least had a sunny Thanksgiving and managed to go biking together! Our meal was just simple for the two of us.
      Sure am glad for having this captured on tape, it is so much better than only some photos (which we did not have!) or nothing at all.

  2. Your high tea table looks fantastic, Mariette! Amazing you made so many lovely desserts and presented them so beautifully! I don’t think I’ve attended high tea though I’ve been to tea ceremony in Japan :-)

      Thank you, it always makes you feel better when you got it all out and ready to serve...
      This was not the High Tea that you get here in the USA, as I use the French pâtisserie recipes as that is also very much what my Province is like.
      But I've been fortunate enough for having attended a High Tea in Japan while visiting there as a chaperone!

  3. Hello Mariette, I wonder how many calories were on that table? How many was it supposed to serve? What about savories? Did you have cucumber sandwiches and the like? We had no elaborate teas in my family, but especially on holidays the dessert table was almost as lavish. There were a lot of good bakers, and each usually made several choices. My favorites were always the crisp cookies, especially the biscotti-like ones called mandelbrote.

    1. Dearest Jim,
      Good question as it was loaded with creams and mascarpone. All things that both of us are no longer allowed to consume... No savories as this was not an English Tea. The French Tea is even older historically and my Province has very much the French taste and tradition, inherited from the French period and influences from their neighboring country as Belgium then still belonged to the Low Countries.
      My family never ever did this, but for the big Fair (a Saint's Day for the Parish from origin), Mom cooked the best meal and later in the afternoon maybe five different sorts of pie got served. She made the meal but not the pies as they are best from the fresh bakery.
      Oh, those crisp cookies you mention, the Mandelbröte would no doubt be my favorite too. Love anything with hazel, almond or coconut in it.

    2. Oops, we did always offer a High Tea for Twelve but of course it was far more servings and next day we invited still quite a group for finishing it off... trying to!

  4. I can imagine the faces of people gathering here: full of smiles. All guests still now would be able to explain the joy of the High Tea. Time passes and memory grows. You are great.

      Such a presentation with delicious desserts of course produces smiles. The presentation to us is for feeding the soul, the eye also deserves something! We sure hope that those teenage girls do remember this event! They were the youngest group we ever had and it is different, that's why my husband gave them first a history and etiquette talk.
      Time flies, looking back to this makes one wonder... How in the world did we all manage to do this?! Thank you for your compliment.

  7. I have hosted many morning teas Mariette, but not a high tea. Your cakes look absolutely perfect, what a lot of work the previous day but so well worth it, what a lucky group of ladies 🎂

      Yes, this was a lot of labor of love but it is satisfying to see the end result.
      We always hoped that it would be appreciated, even though the French version is so different from what they call a High Tea over here...

  10. Dear Mariette - what a stunning set of dessert cakes you made. Those were the days before we were so aware of calories. Although my eyes would be very tempted today, I would have to refrain and just indulge in one small slice of your delicious creations, but which one shall I choose?

      Thank you, it was quite a task for pulling this off but it is also gives so much satisfaction, seeing the finished product being put out.
      It is not so much about being aware of calories, both of us never ever gained any weight, but due to health issues that we no longer can indulge in it.
      Oh, you could take your time and enjoy several samplings.

  12. That is a lot of baking for one person...beautiful spread. Yes I was one of four hostesses for a Victorian High Tea every summer for ten years. The four of us divided up the baking. I usually made three items, but our tea was large and we made 60 pieces of each item..and a few extra for the crew.

      It sure was a lot of baking and preparing but we were younger then and it was for a good cause for the Rotary Club's bi-annual auction as a fundraiser.
      You have been very active over a period of ten years but nicely with a group of four, that helps!
